Ingredients:
2 lbs. Fresh Aquanor Cod Fillets – cut into 4 portions
1 sleeve Ritz crackers
3 tablespoons sweet red pepper – minced
1 stick unsalted butter
1 tablespoon shallots – minced
1 tablespoon garlic – minced
3 tablespoons fresh parsley – minced
Ground black pepper to taste
1 lemon – ½ for lemon juice – ½ for garnish
Preparation:
1) Lightly rinse Aquanor Cod Fillets, pat dry and place in buttered baking dish, skin side down.
2) Melt butter in large saute pan over medium heat. Add pepper, shallot and garlic and saute until slightly soft. Stir in parsley and cook for 1 more minute, stirring gently.
3) Squeeze juice from half lemon and add to above – set mixture aside.
4) Crush crackers in food processor or place in plastic bag and crush with rolling pin. Add to sauteed ingredients and spread evenly over Aquanor Cod Fillets. Add pepper to taste. Bake at 450°F for 10-12 minutes.
5) Cooked Cod should easily separate from skin using spatula. For best presentation garnish with lemon wedges and fresh parsley.
* You may substitute Haddock Fillets for Cod Fillets in this recipe.
