Crispy Aquanor Daurade
with Asian-Style Tomato Sauce

(serves - 6)

Ingredients:

Fish Preparation:
2 (600/800g) Aquanor Farm-Raised Daurade
2 tablespoons olive oil
2 tablespoons garlic, minced
1 cup flour
Salt and pepper to taste

Sauce Preparation:
1-2 teaspoons olive oil
2 tablespoons garlic minced
1/4 cup onions, diced
1 tablespoon ginger, minced
2 medium ripe tomatoes, diced
2-3 chilli peppers, minced *
Sugar
Salt and pepper to taste
Fish sauce
Scallions, chopped
Paper towels

Preparation:

For Whole Daurade:
1) Pour flour onto a flat dish or baking tray. Season with salt and pepper. Mix well.
2) Take both fish, and score 3-4 lines on both sides of the fish. Try to score as close to the bone rack as possible, without cutting the fish into pieces. Dip the fish into the flour tray, and cover the fish completely. Leave the fish until it is ready to fry.
3) Heat the oil in a large frying pan** (that would fit both fish) on medium-low heat. When the oil is hot, add the garlic.
4) Give the garlic a stir, then carefully add both fish in the pan. Flip the fish in approximately 5-7 minutes. In the meantime, start the sauce.

For Sauce:
1) Heat the oil in a medium saucepan. When the oil is hot, add garlic, onions and ginger. When the onions are halfway cooked, add tomatoes, chilli pepper, a pinch of salt, a pinch of sugar, and 1-2 teaspoons of fish sauce (put more or less according to taste). Stir sauce. (This should take about 5-7 minutes). Check the fish and flip if necessary.
2) Cover the saucepan and lower the heat. Let it simmer for 3-5 minutes, or until fish is done, stirring in between.

Presentation:

1) When fish is done, have a few absorbent paper towels in one pile. When taking the fish out, dab the fish on the paper towels before putting it on the 2 separate plates.
2) Turn off saucepan, add some fresh ground pepper. Give it a final stir and pour sauce evenly on top of the fried fish, tableside. Sprinkle some scallions on top and serve with white rice.

*This is a mid/medium recipe. Add more chilli peppers if desired.
**For crispier fish, deep fry fish instead. When deep frying, instead of adding fresh garlic to the pan add 1 tablespoon of garlic powder to the flour mix.
